I have grown increasingly fond of noodles, mainly because of their versatility and just plain yummyness!! That might’nt be a real word but trust me this incredible recipe is!

I love chicken, I also love curry and I’m obsessed with noodles so this is me putting these loves together to bring you something I’m pretty impressed came out of my kitchen, and you can get that feeling too! I have the recipe right here for you!

It’s better than take out!

Cooking and Recreating food at home is always better than take out for me, this is for a number of reasons, I’m going to give you 3 right now!

Reason number 1: It’s nine times out of ten going to be the healthier option. You can choose to use “lighter” ingredients in your coking, for example I used light coconut milk in this recipe instead of the full fat. You can also adjust or change the type of inredients you use e.g using olive oil instead of sunflower, not that there is anything bad about sunflower oil, don’t get that wrong, the simple fact is that “healthier”oils such as olive/coconut/avocado etc come with a few extra health benefits as opposed to vegetable/ sunflower oils.

Reason number 2: You know what you are eating! When we eat out do we really know what were eating? You might be thinking… ‘Sheneece.. Chicken is chicken’, yes I agree Chicken is chicken but when was the last time you ordered a plain chicken drumstick when you went out to eat? Never… right? It comes in and/or with other things and sauces, what exactly is in those things? In fact let’s rewind here, you buying a tray/ whole chicken in a supermarket means you see if it was free range vs caged, corn fed or not, organic or GMO. Chances are we might be getting the caged, meal fed, GMO chickens… no shade on them though they taste good still, but to validate my point, when you cook at home, you know what you’re eating, given you don’t end up using heavily processed foods.

Reason number 3: For the fun of it. The joy of cooking, is when you put effort into making something, it comes out either exactly how you wanted or resembling a second cousin (keep deliveroo on standby), but either way you’ll be smiling or laughing…. see? Pure happiness, if you have the time, why not? Try and make something you never have before!

  • 1 Garlic clove( minced)
  • 1 Tbsp Olive oil
  • 200g Chicken Breast (diced)
  • 185g Egg Noodles
  • 400ml Coconut Milk
  • 200ml-250ml Water
  • 1 Tsp Paprika
  • 1 Tsp Chilli flakes
  • 1 Tsp Curry Powder
  • 1/2 Tsp Cumin
  • 1/2 Tsp Tumeric
  • 1 Tbsp Soy Sauce
  • 1/2 Tbsp Honey
  1. Heat the olive oil in a pot over medium heat, add the minced garlic and fry until aromatic and it begins to golden slightly.
  2. Add the diced chicken breast and cook until it begins browning. Add all the dry spices and coat the chicken with them.
  3. To that add the water, coconut milk, soy sauce and honey. Stir everything to combine then add the egg noodles.
  4. Allow that to simmer over medium heat, stirring occasionally until the noodles are tender and the chicken is cooked through.
  5. Plate up and enjoy!
